With these measurements, the biscuits will have a very delicate and not at all annoying mint aroma. However, if you want to achieve a more intense mint flavor, I recommend getting a very strong syrup and, if desired, you can also add a teaspoon of chopped dry mint to the biscuit dough.


Ingredients:


- 250 g of cornstarch


- 125 g of softened butter at room temperature


- 90 g of granulated sugar


- 60 ml of green mint syrup


- 3 g of baking powder


- A pinch of salt


- 200 g of chopped dark chocolate


- Crushed dry mint (optional)


Step-By-Step Recipe


1. In a bowl, mix 125 g of softened butter at room temperature with 90 g of granulated sugar. Once they are well combined, add 60 ml of green mint syrup and mix vigorously. Finally, add 250 g of sifted cornstarch, a pinch of salt, and 3 g of baking powder. Knead everything until you get a smooth and homogeneous mixture.


2. Let the dough rest for a few minutes, then roll it out between two sheets of parchment paper using a rolling pin until you get a layer of dough about 5-6 millimeters thick. Using a cookie cutter, cut out round biscuits with a diameter of about 5 centimeters and then place them on a baking tray lined with parchment paper. Remember not to place them too close to each other to prevent them from sticking together as they rise.


3. Preheat the oven in static mode to 170°C and bake the biscuits for about 20 minutes. They should not brown but remain light. Once baked, let them cool completely before touching them because when they are hot, they are very delicate, then as they cool, they become more resistant.


4. Meanwhile, melt 200 g of chopped dark chocolate in a bain-marie. When the biscuits have cooled, dip them halfway into the melted chocolate and, if desired, decorate them with chopped dry mint.


5. Place the biscuits on a parchment paper and let the chocolate harden completely before serving. If you want to speed up the process, put them in the refrigerator for 30-40 minutes, then leave them at room temperature for 20-30 minutes.
